Roast Beef Roll-Ups
Use deli meat and cheese for this easy, low-effort lunchbox! These roast beef roll-ups are the best lunch served with a side of chicken noodle soup and salad. Recipe below makes three roll-ups (as pictured in the lunchbox).

Ingredients:

  • 1 burrito size flour tortilla
  • Light mayo
  • 3 to 4 slices deli roast beef
  • 3 slices mild white cheddar cheese
  • 1 vine tomato, sliced
  • Romaine lettuce


Directions:

  1. Spread a thin layer of light mayo over the tortilla.
  2. Lay roast beef across the tortilla in a single layer, then top with cheese slices.
  3. Add sliced tomato and a handful of lettuce.
  4. Fold the tortilla like a burrito: fold in opposite sides towards the middle, then roll in the other direction using your pinky fingers to keep the ends tucked in.
  5. Slice the roll-up into thirds.
  6. Pack with chicken noodle soup and a side salad.
